White Bait Fritters!

White bait fritters are an interesting New Zealand seasonal treat. They are caught in rivers and have a delicate taste when cooked inside a fritter. We spent about NZ$20 on our white bait. It turned out super YUM!

IMG_0333 IMG_0334 IMG_0335 IMG_0336The recipe was really simple and only needed a few eggs and a small amount of flour. (http://www.annabel-langbein.com/recipes/carols-whitebait-fritters/307) So good!

This looks great! Whitebait is so expensive that I’ve never actually bought it before. My husbands parents tell us that when they were young, you’d just go down to the river and get some whitebait. No one would ever dream of paying for it! I think that’s rubbed off on me now. Sometimes whitebait can be $100 per kg!
